Brony Chef Project #23: Fluffle Puffs Chili-Lime "Bakenuts"

Today, we are going to try something different. Instead of referencing a character directly from the show, we are actually going to take a look at an "Original Character" (or an OC for short). I always wanted to explore more of the free form original characters from the "tumbler verse" and what better place to start then one of the most well known through out the Brony Community. Ladies and Gentlemen, the one recipie you all been waiting for....Fluffle Puff.

Fluffle Puff is quite unique in terms of origin as an idependant character. Originally, Fluffle Puff was a fan made joke for the early fandom tumbler Dan-vs.-FiM. After a barage of popularity and fan fair from the cute pink puff ball, She got her own official tumbler and she has been up there since her debut.

Since Fluffle Puff is technically not from Hasbro and the official FiM Franchise, the therory is that Fluffle Puff is from another "tumbler verse" or a parelle universe where Twilight, a human named Dan and Queen Chryslis live under the same roof with Fluffle Puff. This practice of "what if insert character here lived with insert unruly or whacky character here " is actually pretty common not only in the Brony community but also with plenty of other fandoms who use tumbler. If you truly think about it, Tumbler has always been the "multi-verse Hub" for many different kinds of characters and stories that can be from any other show or something completly original. You might say that tumbler is the Stargate of the internet.

As for Fluffle Puff herself, its very difficult to truly describe her as a character. She has virtually no dialog beside her signiture "phfflll" and her gasp. Yet what she lacks in verbal dialog, she uses her non-verbal actions and expressions do all the talking. She is carefree, bubbly and always carring for her freinds and her lover Chrysalis. Fluffle is also curious and enjoys everything about life that interests her (like tacos for example). In short, I think she is just a little filly who just enjoys being herself and getting into all sorts of situations.

As for dish itself, I decied to make something that seems familiar but really unique to fit with Fluffle Puffs character. I decided to use an original recipie that I created by accident and desperation known as the "Bakenut". If you are familuar with doughnuts, then you would see that its originally dough that is deep fried. But what's different about the Bakenut is that it is "half-fried and half-baked" to give the pastry good semi-crispy out side with a very soft inside.

The dough was actually based off of an Italian doughnut known as "Zappole" (zap-o-Le). I decided modify the recipie to use lime zest instead of lemon zest to give the bakenuts more flavor and to set it apart from other Italian Desserts. I also used more of an old world technique of creating the dough by making a patte a choux to give it body as well as fluffness.

The chilie lime surgar is more of a gimmick then the main attraction of the semi-fried pastry. Mostly because, it's more of an attention grabber then the main focus of the Bakenut it self. This relates more towards the unique character design of Fluffles of having some familuar features of a pony but covered in fluff that grabs most of the attention of everyone else. I'm not going to lie, it is unusual in America to make a surgar that is more savory with spices and citrus then making it sweeter then it's intended. Yet somehow, it all balances out when the combination of sweet, spicy and sour to create something that is truly unique compared to the old fashioned doughnuts that we are all familiar with. In terms of how Fluffles act, it defiantly shows that sometimes the bizzare and uncharacteristic of what is expected, can be a beatuiful and delicious phenomenon. Now here is a recipie that essentially branches out to that mode of thinking.

 

 

Fluffle Puffs Chili-Lime "Bakenuts"

 

 

Dough

1 stick of butter (yes 1 stick)

1/2 cup of sugar

1 cup of water

1 cup of flour

4 egg yolks

Zest of 1 lime

 

Chili Lime Surgar

2 cups of surgar

3-4 Tablespoons of Chili Powder

1 Tablespoon of smoked paprika

2 teaspoons of cumin

A pinch of cayene pepper

Juice of 1 lime

 

1. Heat the water, butter, surgar and some salt in a small sauce pan and simmer it for 10-15 seconds. After it is simmered, remove the sauce pan from the heat and add your flour. Stir your mixture with a wooden spoon in the sauce pan until the flour is fully incorperated.

 

 

2. Transfer your dough into another bowl and let it cool for a couple of seconds. Then, with your hand mixer on low speed, add one of your egg yolks and mix until it is fully incorperated. Keep incorperateing the rest of the egg yolk, one yolk at a time until the mixture is fully incorperated. After your incorperated your eggs, add the lime zest to the dough and fold in into the mixture until incorperated.

 

3. Preheat your oven to 350 F. Then take a cookie sheet pan and rub it vegitable shorting until the pan is covered in fat. (You can also use butter or olive oil as a substitute.) With a small spoon or ice cream scoop, scoop the mixture onto the sheet pan. Make sure to add enough space in between to make flipping easier.

 

4. Once your oven is preheated, add your pan in the oven for 13 minutes. After 8 minutes of cooking, open the oven and use a spatula to flip your bakenuts over. Once they are flip, continue to cook for 5 more minutes.

5. While your bakenuts are in the oven, combine all of the chili surgar ingredients into a bowl and mix it together with a wisk until incorperated and turns into a light red color. ( if you see clumps of surgar stuck together by the lime juice, just use your clean fingers to crumble into the surgar and keep mixing in the bowl ) you can store the surgar in an air tight bag in a dry cuburb for up to a week.

6. After about 13 minutes of cooking your bakenuts should be done. If you want to check the doneness of the pastry, take a tooth pick or the tip of your dinner knife into the tickest part of your thickest looking Bakenut and then remove after a few seconds. If the knife or tooth pick comes out clean, it is ready. If there is still some dough stuck to the knife or toothpick, then let it rest in the heated oven for a few more minutes until fully cooked. Once done, let them cool in a cooling rack or a paper towel lined plate.

7. While the bakenuts are still warm, take the bakenuts and cover them with the Chilli-lime sugar. (You can always take the bakenuts and flip them around the bowl.) Shake off the excess surgar and serve with a lime wedge or in a paper, brown bag.

 

What's really neat about bakenuts or doughnuts in general is that you can customize them with different toppings and different flavors. I choose chili-lime surgar because it gives the Bakenut a more Tex-Max twist to the Bakenut (obviously referencing Fluffle Puffs love for tacos and Latin American food). I also wanted to give it the Bakenut a new flavor profile outside of the sweetness spectrum of deserts for that uniqueness quality.

 

I'm actually glad I decied to cover a character outside of the show for once. It gives me a fresh new look not only at the show MLP: FiM, but it also gives me new ideas of how I can tackle other characters outside of the fandom. Maybe there could be other fandoms I could try someday. Who knows.

But anyways, I could say with confidence that Fluffle Puff is one of the best recipies I ever tried outside of the fandom.

Brony Chef Project #19: The "Cinna-Coco" Pummel Mocha

While the winters of Chicago still rages on outside, there is warmth beside freinds and good coffee. I recently started to watch more of season 4 and one new character that recently appeared caught my eye. She was only in one episode so far, but she has gained an impressive audience with the fan art and back stories galor. She is a background pony but I believe she could be more if the series give her more air time. She is simply known as Coco Pummel: a designers apprentice and an insiration for a delectable treat.

Coco's backstory is somewhat unknown to the series so far, but they are however some clues about her origin durring her first appearence. In the episode "Rarity Takes Manehatten", Coco first appeared as an apprentice to the lieing and deceiving Suri Polomare; a competator designer for the Fashion Week compition. She was shy and somewhat weak willed since she was an intern for Seri, but Coco did started to change when she saw Rarity's example of generosity. At the end of the episode, Coco decied to quit her apprenticeship and got the job of costume set designer for the Manehatten Theater: Thanks to Rarity.

Coco is considered what I like to call "the apprentice who became the master" type of character. She decided to guide herself to what she belives is right instead of following an experienced master of the craft who is only successful through unethical practices. Eventhough Coco was weak willed under her apprenticeship, she does have the concious to make better decisions not only for herself but for ethical bussiness practices itself.

The inspiration for Coco was to put in the perspective of Manehatten's caffe scene. I wanted to make something that maybe Coco would get regularly in her neighbor hood to start her day right to face any challange or as an escape from Seri's corruption. I naturally thought about the local coffee houses, arround the city and came up with a "Dessert" coffee drink that adds subtly but originally that Coco represents.

 

The "Cinna-Coco" Pummel Mocha

 

Makes 6 cups

 

Coffee

 

6 cups of hot brewed coffee

 

Flavorings

 

~1/2 cup of coconut milk

 

1/3 cup of coco powder

 

3/4 cup of brown sugar

 

Cinnamon to taste

 

 

 

1. Pour the coffee into individual mugs. (Remember to leave room for the coconut milk.)

2. Add a splash of coconut milk until each cup 4/5 filled up.

3. Add 1 Tablespoon of coco powder and 2 Tablespoons of the brown sugar to each cup and stir.

4. Add the cinnamon on top to taste and serve warm.

 

 

This drink is perfect for any coffee lover who wants to save money while still enjoying the drinks they love. You can serve this drink to to individual guests who want to enjoy some episode disscusstions or lay out some extra ingredients on a table to have a "customizable coffee bar" to create there own pony themed drinks. Although, one of the biggest perks of all is that the coconut milk is lactose, gluten, and soy free: so anyone can enjoy it.

I know this post is little late, but I am still updating. My kitchen is currently being remodeled and there might be some changes to the recipie photos and some delay, but It will look ten times better over time. As for the next recipie, I'm going to have wait and see once the kitchen is done, but for now: I'll try to keep things simple to accommodate my current situation. For now, this is the Brony Chef saying "I bid you all a-do" and enjoy a cup of warm joe this winter.

Brony Chef Project #16: CMC Series #2: Sweetie Belle

In a group of freinds, weather human or pony, there is always one in the group that is not only talented but willing to share that talent with everyone. Weather she knows it or not, Sweetie Belle is one of the most musically talented out the trio known as the Cutie Mark Crusaders.
Sweetie Belle is a unicorn who is not only talented in singing but always energenic with everything she does. Her debut was from "Call of the Cutie" around the same time that Scootaloo (BCP #10). Although, her full character was revealed durring the "Stare Master" episode when she was related to Rarity.
Sometimes, Sweetie Belle would get outshined by Rarity but once she has the spotlight, her voice becomes the star. Her voice is high and somewhat squeaky but once she sings, it becomes smooth and elegant as a professional singer. Yet its more than just the voice that attracts many fans.
Her personality can be annoying but she is sweet and caring to her friends and family. She always loved her sister and lends a helping hand whenever she can. Its true that shes trying to find her talents in the wrong places, but she always try and supports her friends anyways she can.
For the recipe, it was actually a suggestion from Cloudsdale on the Friendly Pony Fort cloud. They suggested I try to create something with Sweetie Belle as a dessert (somehow, I am doing a lot of desserts lately). So when I went to the Farmers Market to find whats in season, I found some grape jelly (referencing to the Sister Social episode) and some cherries that are in season, it instantly clicked that I should make tartlets with the grape jelly and other fruit flavors to complete it. Plus I wanted to relate to Rarity by makeing them as a handheld dessert. Its not exactly the same size but it does drive the point that she can be sweet with a big voice.

Sweetie Belles "Surprise" Tarts
Makes 1 Dozen

Tart Shells
7 oz. of Butter, softened
1 cup of Powdered Sugar
7 Egg Yolks
1 egg
3 cups of whole wheat pastry flour

Filling
8 oz of Grape Jelly
30-40 dried cherries (~4 oz.)
Juice of 1 Lemon
pinch of salt

Ganash and Garnish
8 oz of semi-sweet chocolate
splash of coconut milk
12 Fresh Michigan Cherries

1. Create the crust by whipping the butter in a stand mixer until the it covers the sides of the bowl. Then add the egg yolks and egg 1 yolk at a time until incorperated. (If the yolks breaks, add a little bit of the liquid at a time.)
2. Combine the dry mixture together in a separate bowl and add a little bit at a time to the mixer until incorporated. Keep repeating this step until you have used up the dry mixture. You keep the dough refridgerated for up to 1 week.
3. Once you are ready to make the tarts, preheat your oven to 350 F. Grab a muffin pan and grease the pan with butter. Line the cups with the dough and with small squares of parchment paper, place a clean stone in each cup to prevent rising of the cups. Bake for 15 minutes or until golden brown.
4. While the shells are baking, create the filling by combining all the ingredients in a bowl. Taste to adjusting the seasoning. Set aside in the fridge until ready to use.
5. Create the gnash by melting the chocolate in a double boiler and whisking in a the coconut milk until creamy. Set aside in room temp until tart shells are cooled.
6. Once shells are cooled, assemble the tart by filling them with the jelly filling, then the gnash and adding the cherry on top. Serve.
The tart shells I got from my Luna Recipe (BCP #9) and modify it to incorporate a whole wheat flour to give it a robust earthy flavor. It doesn't really fit in with Sweetie Belle as much but it does show how adventurous Sweetie belle can be.

Brony Chef Project #14: Princess Cadence

As we are on the subject of Royalty durring the last post, I figuire it would be best to create a lighter, brighter breakfast/dessert hybrid for the spring. But first, I would like to introduce you to the ruler of the Crystal Kingdom and Hero of the Royal Canterlot Wedding, the real Princess Cadence.
Princess Cadence came into light in the second half of the Royal Canterlot Wedding. She was found down below the castle after Queen Chryslis (see Brony Chef Project #13), trapped her as Chrysalis took her image. She was reunited with her childhood freind Twilight Sparkle after, Twilight herself, was captured by the same imposter. After an amazing performence of her aria, Candace came to the rescue his fiancé Shining Armor and Banished Chrysalis from Canterlot.
Shortly after, Candance and Shining Armor were sent to the Crystal Kingdom after in the frozen north after a 1000 years of isolation from rest of Equestria. Up there, Princess Cadence became the official ruler of the crystal Kingdom along side with Shining Armor to protect the crystal ponies and keep equestria safe from darkness.
The idea for Cadence came right after I did the Chrysalis Caprese. I knew that someday I would have to do Princess Cadence, since Chrysalis was disguised as her. Plus, it was the right opportunity to try seasonal ingediants for my recipies. For this one in particular, I try to incorperate strawberries since they are in season from Mothers Day to Fathers Day. Not only did the fruit match the season, but the flavor of the strawberry matches the equal amount of sweetness in the character.
I also took suggestions from my twitter (@chefkyro #bronychefproject) and many of them responded that Cadence would be more of the steriotypical dessert of strawberry short cake. For me how ever, I wanted to create something somewhat simular but still different from who princess Candence is normally veiwed.
I decied to create a parfait. Somewhat of a dessert/breakfast health concious hybrid that is so beautiful and so easy to make, that anyone can look like a professtional dessert master.
Not only does it look and taste spectacular but its perfect if you want to start eating healthier for the summer. It has greek yogurt, that has more cultures to help digestion and you can add many different kinds of fruits to add many different nutriants. It also has no surgar but it still naturally sweet, so you can still have desserts without much guilt. Its almost too good to be true.
Ok, enough obsessing over princesses and healthy desserts. Here is the recipie for "Mi Armoire Candenza's Sugar-free Strawberry Shortcake Parfait".

Mi Armore Cadenza's Sugar-free Stawberry Shortcake Parfit
Serves 1 Big dessert or Dessert for two

Parfait
  • 1 Strawberry, cut into 4 equal pieces
  • 4 oz of Vanilla Greek Yogurt
  • 1 surgar-free shortbread cookie (or more if you wish), cut in half
  • 6 oz of Strawberry Greek yougurt
Topping
  • 1/4 pint of heavy cream
  • 1 mint leaf
  1. Make the topping by putting the heavy cream in a chilled bowl and wisk until peaks start to form. (You can use a automatic hand mixer to get the job done faster.) Once the cream is whipped, place the cream inside of the fridge until plating.
  2. Take a water glass or wine glass and place the strawberry slices evenly on the bottom of the glass.
  3. Then add the vanilla yogurt to cover some of the stawberries.
  4. Take the halfs of the cookie and slide them into the glass, flat on top of the yogurt.
  5. Add the starwberry yogurt on top of the cookie.
  6. Take the whipped topping out of the fridge and dollop on top until the glass is about full.
  7. Add the mint leaf as garnish and serve.
Presentation Tips
If you want to add different kinds of presentation for this recipies, the best advice I could give you is to use clear glasses. Not only would it looks luxourious, but it can show case the other fruites and other ingredients you can put into it. You can also change the patern to add some creativity to your plating design or add other ingridents to create a colorful, heathy treat.

The Brony Chef Project #8 & #9: Princess Celestia and Luna

In mythology from many ancient civilizations, there were gods and immortal beings that sort of explain how the nateral world works. The show My Little Pony: Friendship is Magic also has there very own mythology. With creatures such as Timber Wolves to Dragons, the show is filled with immortal beings and fantasy elements that it could possibly compete against the other fantasy culture icons. Anyway, there are two chacters that has the true definition when it comes to fantasy and mythology of the show. Their names are princess Celestia and princess Luna.





In the show, they are the immortal rulers of Equestria. Both of them are the very essence of mythology in the show. While Celestia controls the sun and Luna controls the night, they both have a very strong presence of the land they rule. Even though both of them dont really show up as much , it does give off the theme of the two Alicorns (a combination of a unicorn and peagusus) the fantasy aspect of the show.

They are also a perfect example of a cultural expression known as "fanon" or "fan-character manipulation." Unlike the official or "cannon" characters , the fanon is made through the fans instead of the original creators. An example of this material would be Gamer Luna, Human Celestia and thousands more like this all over the internet. (Note: these are actually tumblers. Google it, I dare you.) This gives a lot of creative room for artists, writers and other fans alike to expand the Brony universe through these "fanon" characters.

As for the recipies, this one is a double header since they go perfectly together. The bitter, dark flavors of the Luna Tart go well with the fruity, bright Celestia's Sunshine Brew. Although the tart was actually used before the project even began. Orriginally the Luna Tart was used for a final exam for my baking class when I started culinary school. It was a rousing success and today, I decieded to share my successful recipie of my professtional career with you. As for the punch, it was inspired from a punch recipe that my mom always makes for parties and other special occasions only my vertion has a special orange twist.





The Luna Tart



Makes 2 9 in Tarts



Crust

7 oz of Butter, softend

1 cup of powdered sugar

7 egg yolks

1 egg

2 cups of all purpose flour

1 cup of bread flour

Filling

20 oz of Dark Chacolate Chips

1 pint of cream

2 tsp of Peppermint extract



1. In a stand mixer, whip the butter and sugar until creamy. (Make sure to scrape the paddle and sides to fully incorporate butter and sugar.)

2. While the keeping the stand mixer on low speed, add one egg yolk into the mixer and let it mix until fully incorperated into the butter. Keep repeating this step until all the egg yolks and the full egg are incorperated. (If you break the egg yolk, just add a little bit of the liquid at a time.)

3. Combine the dry ingrediants on a peice of parchment paper and pour a little bit flour into the butter egg mixture while the mixer is still on low speed. (Keep repeating as same as the eggs until all of the flour is incorporated.)

4. Once dough is formed, place the dough in a plastic bag or container and keep it refridgerated until ready to bake. The dough should last for up to one week.

5. When ready to bake,preheat the oven at 350 F and mold the dough to a tart or pie dish. Place the parchment paper on top of the molded shells and add ceramic pie weights or dried beans on top of the parchment paper. (This ensures the crust to not rise too high and leave room for more filling.) Bake the shells, one at a time, for 15 minutes or until lightly golden brown.

6. Once the shells are done bakeing and started to cool, melt the chacolate by useing the double boiler method or by microwave. (Make sure you read the instructions on the back of the bag for proper melting instructions.) While the chacolate is still hot, add the peppermint extract and the cream. Whip together until creamy.

7. Once the crusts are fully cooled, add the filling to the shell about 2/3rd full and set it inside the fridge for 1 hour before cutting and serving.





Celestia's Sunshine Brew

2 small or 1 Big pitcher



Punch

24 oz. of Frozen Orange Juice, Concentrated

1Liter of Lemon Lime Soda

16-20 Frozen Strawberries

6 lemon slices

4 lime slices

1. Combine frozen orange juice and the lemon lime soda to the pitcher and stir.

2. Place the Frozen strawberries and citris slices into the punch and serve cold.



I tried to incorperate the theme of "Day and Night" for these two recipies, with Celestia being the simple and bright punch and Luna with the complex and dark tasting tart. With the episode pairings of A Bird in a Hoof (Season1 episode 22) and Luna Eclisped (Season 2 episode 4) they are sure to make the perfect duo for your viewing party or a wonderful dessert.

The Brony Chef Project #2: Pinkie Pie

This next character is somewhat of an icon for the Brony's and for some reason the official merchendise of the show. She's only 1/6 of the Mane 6 but she always the center of attention when it comes to the comedic aspect of My Little Pony: Freindship is Magic. She is the master of laughter and has the enthusiasm of 1000 cups of sugar. Im talking about the one and only Pinkie Pie. She is the one of the best examples of cartoon insanity and what gives the show more spunk in every gag she pulls out. She somewhat resembles the spiritural successer of Genine from Aladdin, in terms of the classic, reality bending comic relief. But enough about Pinkie's success; let see what makes pinkie, the pink pony of laughter, a delight to all.

Pinkie Pie is an earth pony who is always upbeat and somewhat crazy of how she veiws the world around her. She is element of laughter of the mane 6 and always see every positive in a negative situation. She never gives up on finding happiness and finds it in the most unexpected way. True, there were times where she was depressed (Episode 19 Season 1 "Party of One") but somehow she manages to get her "poof" back and continue's to make everyones day a bright one. She is also a little ecentric when it comes to her freinds and how freindship works but she does mean well. She is the sunshine for many and a fine example of how to find happiness in everyones life.

This dessert reflects not only her upbeat outlook on life but also her hyper activity and ecentric personality. It has the sweetness of rasberry to reflect her lighter side and some stong coffee to give the truffles a little kick of bitterness and caffeinated insanity.

Pinkie Pie Poppers (Rhasberry White Mocha Truffles)

 

Makes ~20-30 truffles

 

Truffles

11oz or 1 bag of White Chocolate Chips

1 tsp of Raspberry extract

1/2 cup of cold coffee

1/4 pint of Half and Half

 

Coating

1/4 cup of granulated surgar

red food coloring

 

1. Melt the Chocolate in a double boiler or in the microwave. (Make sure you check the instructions on the bag of how long and how powerful you need to set the microwave to melt the chacolate.)

2. While the Chocolate is melting, pour the sugar and 2 drops of red food coloring into a plastic bag. Then rub and shake the bag until the sugar turns pink.

3. When the chocolate is melted, add the half and half, the extract and coffee to the chocolate. Mix until thick and creamy. (If the mixture is to tough to stir, add more half and half.)

4. Using a spoon or an ice cream scoop, scoop up the chocolate and roll them in the pink sugar on a shallow plate. Keep rolling truffles until finished.

5. Serve at room temperature on a platter or until hardened.

This dessert is perfect to keep the party going or to have a sweet treat to brighten up your day. Its also the perfect accompany ment for a nice cup of coffee to give it an extra kick for when you need it.
